Free From: Gluten, nuts, dairy, time
I first came across crab cakes when I went on an East Coast USA trip with Baltimore as a first stop. The first meal was crab cakes straight off the plane!
This recipe is inspired from the trip and puts a free from twist into it!
- 2 tins of Crab Meat
- Salt and Pepper
- 1 tspn Cajun Spices
- 1 Egg
- Hanful of Fresh Parsley
- Squeeze of Lemon Juice
- 2 tbsp Mayonnaise
- 1-2 slices of gluten free (or ordinary) bread (blended into breadcrumbs)
Start by mixing the egg, mayonnaise, herbs, spices and lemon juice before gently mixing the crab into the mixture, being careful not to crush the crab too much. Fold in the breadcrumbs and refrigerate for about 30 minutes.
Once chilled, form 6 cakes and pan fry with a little oil until golden brown. Serve with a wedge of lime and some salsa!
