Beef Cobbler is a favourite dish of mine, one we would have on a cold winter’s Sunday lunch. This hearty but healthy dish is a perfect winter warmer this Christmas.
- 400g minced beef
- 1 can tomatoes
- 1 onion
- salt and pepper
- handful of peas
- JusRol puff pastry
- Grated cheese
To start, chop and saute the onion, then add the mined beef and brown off. Add the tin of tomatoes and peas and cook for 30 minutes.
Meanwhile, roll out the pastry and use a cookie cutter to cut circle scones.
Pour the meat mixture into an oven proof dish and place the scone dough on top. Grate some cheese over the top and sprinkle some thyme over and bake in the oven for 20 minutes or until scones are golden brown.
Dish up and serve.
