Maryland Soup

Maryland soup is another crab based dish. It’s a tomato and vegetable based broth with the addition of freshly steamed crab.

The Baltimore version of Maryland soup is a little spicier, which comes from adding the Old Bay spice mix. Adding a couple of teaspoons into this recipe gives the soup some depth and added heat.

Unfortunately, we don’t have the luxury of living by a harbour, so there’s no access to fresh crab, so tinned will have to do. This however means you can stock up on tinned crab as it won’t go off and can make this soup or my Baltimore Crab Dip whenever you fancy!

The ingredients listed will make around 4-5 portions depending on how large a bowl you dish out.

Ingredients
  • 2 medium sized potatoes
  • 2 carrots
  • 1 tin tomatoes (400g)
  • 1 tin shredded crab
  • salt and pepper
  • 2 tspns Old Bay Seasoning – (Paprika is a good alternative)
  • Saucepan of water ( to boil vegetables and use in the soup)

This soup is relatively simple to make and will require about an hour for the vegetables to cook and the sauce to reduce down to a thick broth.

Method

Peel and chop the potatoes and carrots and add them to a large saucepan. Fill this saucepan with water, to around three quarters full and until the vegetables are covered.

Bring the vegetables to the boil and cook for around 15 minutes. Add in the tin of chopped tomatoes and stir.

Add in the salt and pepper and the Old Bay spice – or alternative – and turn down the heat. Simmer for about 45 minutes to an hour to ensure the vegetables are cooked and the flavour has time to deepen and the soup to thicken.

You can add the crab in at this point. This will allow the flavour to permeate through the soup, but the crab itself doesn’t need cooking so can be added at any time.

You’re ready to serve! Feel free to add a splash of cream to soften the spice. A Baltimore tradition with their crab soups is to mix the traditional tomato broth style with the cream of crab for an indulgent taste.
