Quick Pizza Flatbreads

Quick Pizza Flatbreads – Picture this, you’ve been working all morning in the sunny weather. Lunchtime comes and your mum has brought out pizzas and a beer – bliss! Feels like we’re in Italy.

These pizza flatbreads are easy to make and perfect for a quick lunch, but when you’re not feeling salad.

I also use fresh basil to provide that extra Italian feel, and fresh herbs are always so much better.

I topped my flatbread pizza with dairy-free mozzarella and fresh basil, but the possibilities are endless! I quite fancy trying sliced chorizo or pepperoni or maybe some mushrooms.

Ingredients

  • 2g fast action yeast
  • 3/4tsp caster sugar
  • 120ml warm water
  • 220g Plain flour, plus more for dusting
  • 1tsp salt
  • 40g butter, melted
  • olive oil for cooking

For the Toppings:

  • Chopped tomatoes, blended with Italian herbs (Basil, Oregano)
  • Handful of grated mozzarella
  • A few fresh Basil leaves

Method

To start, mix the yeast into 120ml of warm water. Set aside for about 10 minutes until foamy.

Melt the butter and allow to cool and then ix the flour and salt together in a large bowl. Add in the cooled butter and yeast and mix with a wooden spoon (or by hand) until thoroughly combined.

Knead the dough for about 5 minutes and return to the bowl and allow to prove for around 30 minutes to an hour, but if you don’t have time, rolling the dough out straight away will work too!

Split the dough into 4 or 5 pieces and roll out into a flat circle or oblong shape.

Heat a frying pan with a touch of oil and when hot add in your pizza base. Cook until brown on the bottom and the top starts to bubble and puff. This will only take about a minute on a high heat. Flip the bread and cook until the second side is well browned, around another minute.

The bread should we spotted with well-brown areas and still pliable.

Once the bread base is cooked, add on your pizza toppings. Top with a tomato base and add your cheese and any other toppings. Place under the grill until melted and then top with a few basil leaves.

Serve with a cold beer or soft drink and eat outside!
