Vietnamese Pork Pho

Vietnamese Pork Pho is a soup based dish made with broth, noodles and meat, flavoured with aromatic spices.

Ingredients

  • 4 Pork Steaks
  • 150ml Chicken Stock
  • 300ml water
  • 1 Onion
  • Green beans
  • 80g pasta/noodles
  • Star Anise
  • Cinnamon stick
  • salt and pepper
  • oil
  • Fresh Coriander (for decoration)
  • 2 Spring onions (for decoration)

Method

To start, fry the onions and green beans in a pan with some oil for 5-10 minutes until they soften. Add in the star anise and cinnamon stick and fry off the spices for around a minute, being careful no to burn them.

Add in the chicken stock and the water and season well. Bring to the boil, then turn down the heat and simmer.

Bring a pan of water to the boil, and pop in the pasta. The pasta will take 15 minutes to cook.

Whilst the pasta is cooking, heat up a frying pan with a little oil and add in the pork steaks. Sprinkle over the salt and pepper to season. Fry for 10 minutes, turning halfway through and until there is no pink in the middle.

Once the pork has cooked, place on a chopping board and slice.

To plate up, drain the pasta and add a portion to each bowl. remove the star anise and cinnamon stick and ladle out the broth equally. Carefully place the sliced pork on top and garnish with some coriander leaves and chopped spring onions!

Notes

  4. Whilst the pasta is cooking, heat up a pan with a little oil and add in the pork steaks. Sprinkle over some salt and pepper to season.
  5. Fry for 10 minutes, turning halfway through the time, and cooking until there is no pink in the middle.
  6. Once cooked, place the pork on a chopping board and slice thinly.
  7. To plate up, drain the pasta and distribute in equal portions.
  8. Ladle out the broth equally and top with the sliced pork.
  9. Garnish with coriander and chopped spring onions.
